Chicken Breasts with Walnut and Red Pepper Topping

Ingredients

  • 4 Skinless, boneless chicken breasts
  • 5 ml Olive oil
  • 1 Pear, cored and chopped
  • 125 ml Chopped walnuts
  • 125 ml Chopped roasted red pepper
  • 125 ml Chopped fresh parsley
  • 1 Clove garlic, minced
  • 5 ml Honey
  • 1 ml Ground cumin
  • 1 ml Salt

Directions

    Chicken

  1. Brush chicken breasts with olive oil on both sides.
  2. Place chicken breasts on broiler pan.
  3. Broil 10 minutes. Turn chicken and broil 7 – 10 more minutes, or until chicken is cooked through.
  4. Sauce

  5. In a small bowl, combine ingredients for topping.
  6. Spoon topping over broiled chicken.
